Mexican food. Ole!

I am a big lover of Mexican food. Cheesy, Spicy, whatever, I'll eat it. Anybody else here love Mexican food besides me? What are your favorite items you like to eat? Or what don't you like?

Tacos, Nachos, and Burritos for me.

And I often make my own burritos, (Jewel brand Mexican cheese, Azteca tortillas, sliced chicken from the deli, hot sauce, and sometimes peppers).
It equates to something like 50¢ for a burrito, which beats the price of most anywhere else, so it's kind of a staple in my home.

My tacos and nachos are liminited to just meat and cheese. I too much of picky/simple eater to tolerate or enjoy more complex abd spicier food/

If it has some of these: meat, beans, cheese, lettuce, sour cream, and a tortilla, I'll probably love it.

Carnitas as the center of a one plate meal, or for filling tacos, burritos. Fish Tacos, if done right, are heavenly.

I gone beyond the usual standards; there are two dishes that stand out Carnitas and Mole.  Carnias is not the pork chucks simmered in a sauce and peppers.  No, I take pork but, simmer with seasons till tender then put it in a oven to crisp.  Mole is a very complex chili sauce. I have made Mole poblano in the past,  it take better part of a day to grind the chillies, spices , simmer and then the turkey. I freeze leftover sauce  for a quick dinner using chicken or shrimp.

Mole is good, though I've only had it on a few occasions.

I put myself down for the pretty basic list of nachos, burritos, and Spanish rice. I'm willing to try any other variety of Spanish cuisine, but these are just what I'm most familiar with right now.

As for spiciness, I can handle a decent bit, but I also seem to have a somewhat sharp cut-off point. I like heat, but there is a fine line between a good amount of heat and just too much for me to handle.
