Hello, and welcome to my first little recipe here! I think doing this was a whole lot of fun, so I'll probably be posting more when I get the chance. :)

The breakfast is an omelet with red and yellow bell peppers, onions, avocado, feta cheese, and Monterrey jack cheese, chopped cantaloupe, and a fruit smoothie. Keep in mind that this is my recipe, meaning my personal taste, and any or all of these ingredients can be omitted and others added. That's the beauty of cooking, it's an art and expression of one's tastes, so don't hesitate to post here how you experimented with this! :D




Step 1. Prep a medium sized saucer pan with olive oil. Set it to a medium-high heat.

Step 2. Chop your desired vegetables.

Step 3. Put your vegetables in the pan. Stir them around a little, and make sure that all of them get enough heat. Avoid the edges of the pan, they aren't as hot, and check on them to cycle some of the lesser cooked bits to the center.

Step 4. Make sure you have your garbage dispenser at the ready, because you are bound to drop some tasty morsels.

Step 5. While waiting for the veggies to cook, gut a cantaloupe with a spoon and chop it up into bowls.

Step 6. Crack two eggs into a bowl and whisk them.

Step 7. Put a little bit of butter in a small saucer pan, and wait for it to melt. If you have a nice pan like the one shown, avoid scraping it with the butter knife if you choose to smear it onto the pan. Set the pan to a medium heat. In this case, it is set to 5, I didn't get the best angle.

Step 8. When you smell the tiniest bits of burning from your veggies, turn the pan heat to low, to keep them warm.

Step 9. When your butter is melted, pour the whisked egg into the pan.

Step 10. The egg should appear mostly cooked before you flip it. After you flip the egg patty, sprinkle a little bit of salt and pepper on it. Don't be liberal with your sprinkling, the omelet will already be very rich if you add as much cheese as we do, and if you oversalt or overpepper your egg, it'll just upset your tummy.

I know the egg doesn't look fully cooked, that's because we accidentally added the salt and pepper before we flipped it. Flip your egg first.

Step 11. Make your smoothies. We use a tropical frozen fruit mix from Costco, bananas, and apple juice.

Step 12. Add your vegetables to your egg. Spread them so a majority is on one side, so it's easier to flip the lighter side over the heavier side. We didn't do this with the first omelet, so you won't see that.

Step 13. Add your cheese!

Step 14. Flip your omelet. Be quick, or you'll goof up and end up with a mess!



Step 15. Enjoy your delicious breakfast.

Haha, I am the sort of person who whips salt and pepper in with the eggs, and then puts more inside while the omelet's cooking, and then puts more on top once it's done. :D Stomach of steel?

This looks delicious! I wouldn't have thought of omelets + cantaloupe, but I should give it a shot.

To each their own. :)

The cantaloupe is a very muted and different flavor, and helps you eat the omelet, as ours were very rich. We like lots of cheese :D

I think I'll try that! :D It looks delicious! But, we never have cantaloupe... Anyway, what gave you the idea to use a melon with eggs?! It sure seems yummy, but was it a random idea? (:
