Chex Mix recipe
« on: January 22, 2010, 11:28:02 am »
Here's a fun little recipe for a snack my mother made for me during Christmas last year and I thought I'd share with everyone. :)

1 1/2 sticks of butter.
3/4 cup of brown sugar.
(Boil slowly for 2-3 minutes until completely melted/mixed.)

Total of 6 cups of the following:
2 cups Rice Chex
2 cups Wheat Chex
2 cups Corn Chex

1 cup cashews or any other nut. (Optional)
M&M’s for color. (Optional)

Put all ingredients in large bowl and mix with the brown sugar liquid/syrup.
Then put in/on a 9” x 13” pan (or larger) and bake at 350 degrees for 8 minutes.
Take out, stir, then bake an additional 8 minutes.
Finally, take out, let cool, then serve.  :)

Sounds like a nice mixture. Ofcourse, you can also buy a bag of Chex mix at your local minimart, plop it in the microwave (outside of its aluminum foil bag) for a minute and have the same effect with less mess.

Yeah thats true but it just doesn't quite have the same taste as making it yourself. Making something yourself, even something simple makes you feel good about yourself and because of the effort put it the food tastes even better.

The one important thing I forgot to write before I went to work this morning, was that you have to be very careful cooking the brown sugar mixture. If you cook it for too long or too high of heat, then it will burn. You have to be very careful cooking that mixture and keep an eye on it. 2-3 minutes, but no more.
