Actually! Humans can process cellulose. it acts as a hydrophilic bulking agent, more commonly referred to as Dietary Fiber, which get's broken down via cellulolysis. (i knew my biology class had to be good for something) Are systems however are very limited in their ability to break it down.

No, we do not posses the enzymes to break down cellulose, there are however bacteria in our intestines that do produce that enzyme and contribute to our limited ability to indirectly process cellulose.  This is also the reason why powerful antibiotics give many people diarrhea, the antibiotics pass through the system and kill the bacteria. There has yet to be a single vertebrate discovered that can independently process cellulose
