It's New Year's Day right now and I've decided to start the day not by relaxing first, but by fixing breakfast of bacon and eggs. :) I haven't had a good breakfast in a long while.
But anyway, my favorite item to eat with almost any breakfast is BACON! Mmmmmmm. :) I love it hickory smoked and/or maple flavored. But I also prefer thick sliced too. My absolute favorite style is peppered bacon! Yum!
So how does everyone enjoy their bacon?
Thick sliced?
Thin sliced?

Thin or thick, it doesn't matter to me.

I like Hickory or maple, I don't care for the other types out there but no matter what it must be chewy and soft, I can't stand crispy, crunchy bacon. It always tastes burnt and I cut my gums now and then on it. A lot of folk like their bacon crispy but I hate it like that.

Bacon isn't just for breakfast either, I love it on nearly everything possible.

As for other breakfast foods, I enjoy sausage (especially Hormel lil' sizzlers) scrambled eggs with lots of salt, biscuits with white gravy, pancakes with lots of mapel syrup and big glass of orange juice. Minute Maid, low pulp is the only kind worth buying IMHO.

But in the mornings before work I don't have the time to fix such foods, nor do I have such foods t cook in my fridge, so I usually start my mornings off with a chicken pot pie.

THERE. I FINALLY ADMITTED IT. I've been hiding it all these years.

I've been in the bacon closet my whole life. It feels so good not to have to hide my true self.

Anyone who knows me well, knows that I have a hard time jumping to one side of the fence or the other.  The world, for me is not bacon++ or bacon--.  Bacon is one of those things that I like to have once in a while, but when I want it i really do.

I used to like to have the standard bacon and eggs with toast.  Sometimes I still go for that.  More often though, I want to put it in or on something.  Breakfast sandwich, bacon in my omelette.  Non-breakfast?  I love a B.L.T. Club, bacon cheeseburger and Mac'n'Cheese with bacon.

I have, however, greatly reduced my consumption of bacon over the years.

Occasionally, I want bacon. Mainly, pepper bacon from Nueske's (a small outfit in Wittenberg, WI that makes and sells apple wood smoked meats), but I seldom like it on its own. I usually prefer it in something, like a Cobb salad or prefer the unsmoked variety (pancetta) in a chicken or seafood carbonara. Which for me, carbonara for breakfast is just awesome (as is any pasta). Perhaps a carbonara frittata would be good. That would be quite a different spin on eggs and bacon.

I have no idea how i missed this phread over the New year Weekend. Oh wait, yes I do, i was still in recovery mode from Thursday night.  :D

Anyway, I am much like the phread orginator. I am a bacon lover, and like him, I too started off Jan 1st, with fried eggs (over hard) and bacon. However, I am picky about it. I do not like my bacon messed with in any way. So you that like maple, or hickory or pepper or smoked flavorings to it, you can have all you want. Give me natural, off the hog thick or thin cut and slightly undercooked. I like it firm, but not crispy. The longer you cook it, the more the meaty flavoring is fried away.

This is similiar to how I like most of my food stuffs. I'm a food purist, or as some have described; a bland pallet. I do not like to add spices, sauces or other augmentations to my food that I am eating. My reasoning, is that if I have to add something to my food to make it taste good, then the actual food i am eating must be inherently bad. So, why would I eat bad food? The most I ever add is a slight splash of table pepper to certain foods. I never add salt and if you hand me a bottle of ketchup, I will look at you like you're insane. And don't even dare try to put steak sauce or tabasco on a nice cut of steak while in my presence. I will shun you.  :P

I do love bacon~! Thick, applewood smoked bacon is my favourite and I almost always have to eat any kind of bacon with a little bit of maple syrup (unless I'm using it as a topping for a burger or if I'm wrapping it around a cut of meat before it's grilled).

I'm also picky about how I like it cooked. It's got to be not too crispy and not too chewy. Somewhere right in the middle.
