Grill recipes!

So, a few weeks ago, it was my birthday.  One of my gifts was my very first grill!  I love cooking, so this made me rather excited, needless to say.  Of course, I don't really know much to make on one yet.  Does anyone have any good grill recipes?

So far, I've made teriyaki salmon and vegetables on the thing.  A one pound slab of salmon, fully skinned and coated with soy sauce, in a foil bag with broccoli, squash, and slived up portabello mushrooms.  Added a half cup of teriyaki sauce, closed the bag, and cooked it on the grill for 11 minutes a side on medium.  It turned out wonderfully, despite the bag breaking when I tried to flip it, heh...

I don't know what kind of grill you have, but if it's large and has a cover, (like one of the bigger Webers)try this.

What you will need to start off with:

2 pounds freshly cut green hickory wood, if not 1 pound hickory wood chips,soaked over night in water, then drained and dried off. --Best if you have access to freshly cut green hickory, though.
Charcoal in your grill, that has reduced to coals. DO NOT use the ready light stuff.
A thermometer. -- Hopefully your grill has one built into the lid.

1 Pork shoulder rinsed off.
1/2 cup salt
1/2 cup ground pepper
1/4 cup red pepper flakes
2 Tbsp. Garlic Powder
1 Tbsp. Onion Powder
1 Tbsp. dry ground mustard powder.

Blend all of the spices and salt together well, and cake the mixture onto the meat, making shure that all parts of the pork shoulder are covered.  let the meat sit for about ten minutes after rubbing, and do it again.

Ensure that the inside of the grill is at 230-250 degrees (F), add some hickory chips, and place the meat on the grill. Place the lid back on the grill, and cook the meat for 8 hours, turning the meat every hour, and also adding additional small amounts of charcoal and hickory chips, maintaining your heat at between 230-250F for the entire duration of the cooking process.

After cooking, let the meat cool down on a rack or a pan for about an hour or so, then cut it to the bone. --If you've cooked it correctly, the bones should remove quite easily with a little bit of effort. If this is not the case, cut the bones out, and remove the meat from them. The remaining shunk of meat can either be hand shredded ( along the grain of the meat) or chopped up. Chop the skin up really fine, and blend it with the meat. Add your favorite BBQ sauce, or cider vinegar and enjoy.

If you are looking for a good side dish to make on the grill along with your meat, this is a family favorite. If you are using a gas grill, keep it on the top rack for most of the cooking time to avoid burning.

In a foil pack, place sliced potatoes (reds or Yukon golds are best for this) with sliced bell pepper and green onion. Add small cubes of butter, sea salt and black pepper. Fold in edges of your pack and place on grill. Potatoes are great this way!
