Title: Chicken Fajitas! :D
Post by: Wox on September 19, 2012, 11:33:51 pm
So this is like one of my all-time favorite dishes to cook as far as difficulty goes, to start you are going to need the following: 1 lemon, 1 orange, 1 pack of fajita mix, 2 slice chicken breasts (strips is fine, or however you like to cut it), 2 bell peppers (any color, I use red and green), and 1 onion, and then your basic cooking utensils. First start by marinading the chicken, chop the lemon and orange in half and juice them both by hand, or with a Manual citrus juicer (e.g. http://www.google.com/imgres?imgurl=http://recipedose.com/wp-content/uploads/2010/03/Manual_Citrus_Juicer.jpg&imgrefurl=http://www.recipedose.com/2010/03/manual-citrus-juicer-hand-juicer-in-stainless-steel.html&h=300&w=300&sz=14&tbnid=TJUbB51-U_eYGM:&tbnh=99&tbnw=99&zoom=1&usg=__Zxj3M6Yk621l6bTgjLpKIziw2lA=&docid=F0Gx5s_KLoVG6M&sa=X&ei=r4xaUIu9Bomk8gSYqICADg&ved=0CGEQ9QEwBg&dur=546), then once you have the juice, add the fajita mix in, and depending on how well you juiced the fruit, you should have plenty of marinade for what's ahead. Make sure to keep about 2/3 cup of the marinade for a later step. Go ahead and throw that remaining marinade in with the chicken in a gallon-sized plastic bag and swish it around a bit, and let that sit. Now go ahead and chop up those vegetables and set them aside. By now your chicken should be ready to cook, just remember, the longer it marinades, the better it will taste. Set the pan on a normal sized burner at about medium temperature, and cook the chicken until done (if you need help on how to know when it's done just take the tip of a sharp knife and try to cut it, and if it is easily cut in half, it is done) now after that is done, take all the chicken out of the pan and put it in a medium sized plastic bowl, then throw in the veggies, and take that 2/3 cup of marinade you set aside and throw that in with the veggies. Cook those until they are cooked to how tender you like vegetables. Now turn off the burner and throw the chicken back in to warm up a little, and your meal is cooked, can easily serve 4 with leftovers :)
