Title: Side dishes?

Ever have trouble trying to decide what to fix for a side dish to go with the main food item? Do mashed potatos or rice, etc. get to be a bit boring?

Anybody got any good tips or recipes for side dishes?

Couscous is a nice alternative to rice every once in a while. I have no clue how to cook it.

I often mix up the sides into one main side. My fav combo is Mashed Rice Potatoes with corn and peas mixed in.
