that would be awesome if the email alerts i get for the post responses had both the thread name and the latest post instead of just a link.

The thread name should be in the email's title.

To be sent the text of posts in the emails you get, go to Profile->Notifications and Email->When sending notification of a reply to a topic [. . .].  If you don't also unset Profile->Notifications and Email->Receive reply notification only for the first unread reply (and you may prefer to not do so), you'll only see the first unread message until you visit the forum thread again.
