crock pot shepherds pie

Crockpot shepherds pie

Ingredients

2 pounds lean ground beef, or 1 pound beef 1 pound lamb, or you can substitute with ground turkey
one finely chopped onion
2 teaspoons minced garlic
one 14 ounces diced tomatoes/drained
one 14 ounces mixed vegetables - peas/carrots/corn
3 tablespoons quick cook tapioca
2 teaspoons oregano
1 teaspoon salt
half teaspoon black pepper
48 ounces of mashed potatoes

Brown the meat in a skillet, then drain off the grease, and put the meat in the crockpot. Put in the onion, garlic, tomatoes, veggies, tapioca, oregano, salt, pepper, mix well and cook on low for seven hours, stir once each hour. At hour seven, evenly cover the meat and veggies with the mashed potatoes, cover and allow to cook for an additional 30 minutes.

Although quite plain looking from the top in the pot, it has a wonderful look once it's on your plate.

Love me some shepherds pie. This is also great with chicken. Bake your chicken first.  If you saute' your onion first it'll add an extra sweetness to the pie.
It's been said that rats can gain access to your home by climbing up threw your toilet. I prefer to use the front door.

 ;)yep, only saute until until the onions are transparent, and use butter.
If you don't like butter, coconut oil is a good alt.
