Pickled Cabbage.

Think I'm addicted.  :D

My recipe
makes two quart jars
1/2 head of red cabbage.
2 red bell peppers
2 small or one large red onion.
1 1/2  cups water
1 1/2 cups vinegar ( white or apple. Wine would not be good for this.)
2 Table spoons of salt
1 table spoon of Mustard seeds
1 teaspoon of celery seeds

In a pan heat up the water and vinegar, salt, mustard and celery seeds. Bring to a good simmer.
Cut cabbage, peppers and onions into strips.
In a large bowl mix the veggies evenly
Stuff the veggie mix into both clean quart jars.
Poor hot ( NOT boiling. boiling water may crack the jar) over the mix. Make sure to keep most of the seeds out of the jars.
Lid the jars and let cool.
Put both jars in the ice box.
Good to eat the next day. Better after a few.

I chose to keep the seeds out of the jars. But you could even add more in each jar. How intense the flavor is up to you. Adding garlic will make this bitter or 'sour'.  You can also add sugar wile boiling. A teaspoon to cut the tart. A tablespoon or more to make it sweet. 
It's been said that rats can gain access to your home by climbing up threw your toilet. I prefer to use the front door.
