Rice-A-Roni Taco Boats

Kobuk’s Rice-A-Roni Taco Boats

Well, not actually tacos in the literal sense, but I made a new way to use packages of Rice-A-Roni rice mix.

1.  One  6 ½ oz. box of Rice-A-Roni Mexican or Spanish flavored rice mix. Your choice.
 

2.  One 12oz. package of Green Giant brand Fire Roasted Corn w/ Peppers & Onions.


3.  One 12oz. package of John Soul’s Beef Fajita Strips (Or some other brand of packaged beef/steak fajita strips. Chicken strips may be substituted if desired.). Preferably thawed, not frozen. If the strips are in large pieces, you may wish to cut them into smaller pieces if desired.

4.  One (or two)  8-count package of Old El Paso Taco Boats (Flour tortillas may be substituted if desired.)


5.  One 14oz. can of diced tomatos. (Optional)

6.  Fix Rice-A-Roni according to package directions in a large skillet. After you add the water and seasonings, then add the package of Green Giant vegetables. Add the beef/steak strips next. Mix everything evenly and continue cooking until all the water is evaporated/gone and the rice/beef/veges mixture thoroughly heated.
Spoon portions of the rice mixture into Old El Paso brand Taco Boats and garnish as desired with sour cream, shredded cheddar cheese, or any other toppings you may desire.

This recipe will make a lot of rice mixture. A large skillet is preferable.
