It depends on the cuisine: stir fried  or braised when appropriate. In other words, I like to use to correct Asian technique for the dish but I never will do stir-fried (throw  a bunch of  veggies and meat into a wok and glob sauce over it). I find fake Asian food detestable.

I do a lot of stews and grilling. Vegetables are strfried or  steamed or lightly sauteed never boiled.

it depends on the food
but if it's steak, as raw as they can legally make it...sometimes medium rare
how many neon pink and black rabbits does it take to screw up a lightbulb factory?

ugh molecular gastronomy (the par that goes beyond practical science) is a food fad I wish that would go away.

 I am not about to go Heston Blumenthal on everyone here.  Molecular gastronomy has been used to develop a lot of food products.  Escoffier used it to create, what was genius in his time, the buillion cube. Think about what that single development did for food.
