Ooh, ooh, I do! I love eating vegetarian when I can, there's so many options!
Currently I'm really loving this
black bean soup recipe. It's so good, throw a bit of queso on top and it just gets better (queso blanco, that white crumbly cheese you get on stuff at Mexican restaurants).
Vegetarian sandwiches are also good. A nice soft sub roll, guacamole, bit of lettuce, tomato, cucumber, sprouts, and provolone!
I know I've got a bunch more recipes, they're just all at home where I can't access them right now
. Generally though we've always got piles of fresh veggies and fruit and nuts to throw on salads, so I guess that's another recipe kinda? Snap peas and orange wedges go great on salad.
