Loaded Potato Casserole

Lobar:
This is a very easy and versatile recipe.  Pretty much any dry ingredients that go well with potatoes can be added to the base recipe without screwing it up.  Recipe makes 3 quarts.


Base recipe:

2 lbs. potatoes, cut in 1/2" cubes.
16 ounces of sour cream
4 cups of your favorite shredded cheese or blend of cheeses.


Recommended additions:

6 green onions, chopped
4 strips of bacon, chopped
1 green bell pepper, diced small
Salt to taste
Tabasco sauce to taste


Mix all the ingredients except for 1 cup of the cheese in a large bowl, then transfer the mixture to a 3 quart casserole dish.  Top with the remaining cheese, then bake covered at 325F (165C) for 50 minutes.  Uncover and bake for an additional 40 minutes.


For softer potatoes, try parboiling them for 15 minutes prior to cutting.

I'll have to try this as a shepards pie -- never thought of using sour cream, but it sounds good!

OOOO!!! Tak and I wanted to make a potatoe cassarole tonite but were unsure about it... Wonder how broccoli would be added in? Thanks for sharing,Lobar.
