Title: Soop > kek.
Post by: Eth on January 16, 2006, 10:51:32 pm
This is the wild rice soup recipe I promised Lobar a while back that gained some kind of freaky notoriety on IRC. I should note that this recipe was recalled 'from memory', and that most of the ingredients can probably be adjusted to taste.

---

Ingredients:

1lb. wild rice (MN wild rice is clearly superior)
1/2 a large onion
1-2 bags of baby carrots
4-4 celery stalks
1/2 cup sliced almonds (optional)
1-2 'family size' cans of cream of chicken soup, plus an equal amount of milk or half-and-half (for richer soup)

Dice the onion, carrots, and celery and sautee them in oil and butter until the onion is translucent. Afterwards add almonds (if desired) and sautee for three or four more minutes.

Cover the sauteed veg and let it cool while you cook the wild rice as indicated on its packaging. Once the rice is cooked, drain and add the veg. Add the large can of cream and chicken soup, then add a canful of milk or half-and-half.

Simmer the soup on low for ~1 hour. Add more cream of chicken along with milk or half-and-half as it simmers to keep the soup from becoming too thick.

Mmm... Wild rice is awesome on it's own with just a bit of butter and some celery for extra texture. It's always a pleasure to cook it, since it fills the kitchen with such a wonderful aroma.
My fiancee is Ojibwe (Chippewa to you Americans) and we usually try to pick up wild rice from vendors at the local pow wows. There're those that grow it organicly on Manitoulin Island.
S'good, wholesome 'nish food. :)
