One of my specialty cookies. These combine the flavors of chocolate, vanilla and strawberry into one scrumptious cookies. I usually make these around Christmastime. My mate loves them, he got pissed at me last year when I didn't make them.
You'll need:
3/4 cup vegetable shortening
1 cup granulated sugar
1 egg
1 tsp almond extract
2 cups all purpose flour
1 tsp baking powder
1 tbsp vegetable shortening
2 tbsp cocoa powder
1/2 tsp raspberry or strawberry extract
1 egg white slightly beaten
red food coloring
In a large bowl cream 3/4 cup shortening with the sugar. Add egg and almond extract. Mix well. Sift flour with baking powder. Blend into creamed mixture. (If it looks like little beads, that's normal when I make it, just push it together with your hands like you're playing with play-doh)
Divide the dough into three portions. To one, add 1 tbsp shortening and the cocoa. To another, add a few drops of red food coloring and strawberry (or raspberry) extract. Blend well.
With plastic wrap, line a loaf pan about 3x6 inches and 2 inches deep. Press the chocolate dough into the bottom of the pan until it completely covers the bottom and brush with egg white. Press the white dough over the chocolate dough and brush with egg white, then press the pink dough on top and brush with egg white. Wrap the plastic wrap around the three layers to cover the whole package. Chill several hours in the refrigerator.
Preheat oven to 375ยบ farenheit. Remove dough from pan and cut into 1/4 inch thick slices (just like cutting a loaf of bread). Bake on an ungreased sheet for 10-12 minutes. Transfer to wire racks and let cool.
