an idea for pineapple-ginger rice

In a while I want to cook my BBQ-pineapple-bourbon ribs (I cook like 6 shots of bourbon and pineapple slices in a large bottle of BBQ sauce) and I was trying to think of a side for it.  I was thinking of making like a pineapple-ginger rice, and I was thinking maybe cook the rice in actual pineapple juice, instead of water, and then add ginger and maybe some teriaki....  and maybe a little oriental seasoning like chinese 5-spice.  I'll probably put some pineapple slices in it, too.

You think this could work???

I'd think that cooking it in straight, undiluted juice may give it too strong a pineapple flavor, and will definitely make it very acidic.  But, it's hard to know for sure if a concept will turn out good or not before experimenting with it some, so go for it!  And of course, let us know how it turns out.

Hmm, those ribs sound yummy! ':p'
For me, to have something else with pineapple would spoil it.  What I'd be inclined to do would be something plain to offset the yummimess of the ribs like plain rice with maybe some nuts and sultanas/raisins/pineapple bits mixed into it.
Blimey, I'm drooling at the thought of all this scrumptious food! '<img'>
The pineapple-ginger rice sounds nice all on it's own actually.

Ah, that's a point I forgot to bring up entirely.  As a general rule, your side dishes should not taste like your entree.  The entire point of having side dishes is to bring variety to a meal, and having a pineapple theme to a meal is completely counterproductive towards that end.  When planning a meal, your goal should be to repeat flavors, colors and textures as little as possible.

It could be a great side dish to a different entree though, one with a more savory or salty flavor rather than sweet.

I think you're right about the side-dish....  I'll make the rice on its own.  I'll post how it turns out '<img'>

well, i doubt it would be very acidic, but yeah, your right about the intense flavor part.  as for the acidic part, i dunno, i don't think it would be that acidic, pineapple juice isn't THAT acidic, its acid level is low.

Pineapple juice has a pH level of around 3.5, about the same as orange juice.
